Old Quebec Vintage Cheddar is a traditionally-aged cheddar produced by one of Québec’s award-wining dairy companies, Agropur-Fine Cheese Division. The cheese is cured a minimum of three years, and only blocks with perfectly balanced flavor are chosen for this vintage. Following production, the cheddar is allowed to rest for nine to twelve months, after which it is graded on the basis of texture, flavor, aroma, and color. Then, the cheese makes its way to Lancaster County, Pennsylvania for the rest of the 3-year aging process.

Agropur cooperative is one of the largest Canadian dairy companies. The cooperative, which is owned by more than 3,400 dairy farmers, offers a wide selection of dairy products, including brands such as OKA and Chevalier.
